Pound Cake Traditions

 What Happens if I Don't Put Baking Powder in a Pound Cake?

Pound cake is a dense and rich cake, traditionally baked in a loaf pan. The cake takes its name from the original recipe, which called for a pound each of butter, eggs, sugar and flour. Today, most pound cakes include chemical leavening like baking powder to help them rise. A skilled baker can opt to bake a pound cake without baking powder, but getting it to rise will require some elbow grease.

The Ingredients

You can make an excellent traditional pound cake by combining 2 sticks of butter, 4 large eggs, 1 cup of granulated sugar and 1 tsp. of vanilla. The dry ingredients include 2 1/4 cups of cake flour, 1/4 tsp. salt and 1 tsp. baking powder. Unlike most cakes, the baking powder plays a relatively small role in leavening pound cakes. If you prefer a moister and slightly less dense pound cake, choose a recipe that includes milk and a higher ratio of fat, like butter or shortening, to the other ingredients.

Mixing

A high, finely textured pound cake requires special care as you combine the ingredients. Combine the butter and sugar and beat until light and fluffy with a hand or stand mixer. Add the eggs one at a time, beating for at least 1 minute after each addition. Quickly mix in the vanilla. Lower the mixer speed and blend the flour just until a stiff batter forms.

Baking Without Baking Powder

While modern pound cake recipes do include baking powder, if you mix the basic ingredients in a pound cake correctly you can bake a delicious cake without any chemical leavening at all. Mixing the cake correctly is essential, since the eggs are the sole leavening agent. Start with all ingredients at room temperature, particularly the butter and eggs. Beat the butter and sugar for a full five minutes and allow at least two minutes of mixing after you add each egg if you'd like to bake a pound cake without baking powder. Fold in the dry ingredients by hand as gently as possible for the best height, rather than relying on your mixer.

Problems

Baking a pound cake without baking powder can result in a heavy, grainy cake with an unappealing texture. The flavor will not change, but you'll lose the traditional high, cracked top. Very careful mixing can prevent this, but the baking powder acts as an insurance policy for your pound cake.

Butter Pecan Cake

1 box Betty Crocker Butter Pecan Cake Mix

2/3 c. oil

1c. milk

5 large eggs

*1 can Coconut Butter Pecan Icing

*1 c. chopped pecans

 

MIX cake mix, oil, milk, and eggs well on low speed.


Add 1/3 of canned icing and mix at medium speed.

 Add another 1/3 of canned icing and mix at medium speed

Add the last 1/3 of canned icing and mix at medium speed.

SPRINKLE pecan pieces in a sprayed Bundt cake pan.

BAKE 55-60 MIN. AT 350 COOL BEFORE ICING

ICING

1-16 oz box powdered sugar

1 stick butter softened

1 8 oz cream cheese softened

SPREAD ON COOLED CAKE

1/4 lb. Soft butter
8 T. Confectioners sugar
3T. Ice water
2 c. Plain flour
1 t. Vanilla
1 c. Nuts

Mix well butter and flour, add sugar, add water, vanilla, and chopped nuts.
Roll in the shape of fingers. Bake 20 minutes at 375 or until slightly brown. Roll in confectioner sugar while warm.

  • Cream cheese
  • Shredded cheddar cheese

  • Heavy cream
  • Melted butter
  • Garlic powder
  • Italian seasoning 

How to Make Cheddar Garlic Keto Biscuits 

This recipe starts with a cream cheese, cheddar and egg base. This provides tons of fat and moisture to create the perfect biscuits. Next we add almond flour, baking powder, salt, butter and cream. This is an almond flour only recipe so if you aren’t a coconut flour fan, you are in luck. 

  1. In a mixing bowl, combine the softened cream cheese, cheddar cheese and eggs. 
  2. Add almond flour, baking powder, salt, heavy cream and melted butter.
  3. Chill the dough 10-15 minutes.
  4. Using a small cookie or ice cream scoop, spoon the biscuits out onto a greased or lined baking sheet.
  5. Lightly press the dough down.
  6. Bake until golden.
  7. Meanwhile combine the topping: melted butter, garlic powder and Italian seasonings or parsley. Brush onto biscuits.

Mom's Country Style Steak



  • Cubed steak
  • Oil
  • Flour
  • Salt and pepper
  • Water and (milk if you like)

Cut the cubed steak up in pieces that will fit in your Instant Pot. Dredge you steak in flour and seasoning. I sometimes add garlic powder and paprika. I use a gallon zip-lock to do this. Mom did hers on a platter. If you buy a large pack of meat you may have to brown the pieces and remove to a plate as you continue to brown all the meat using the SAUTE feature. (It will get hot.) 
You can brown it on the stove, but who wants to wash another pan. That is why IP is easier than a crockpot.

Remove the browned steak and scrap the pan to loosen the yummy bits. You can add more flour and brown it, but it is not necessary. Return the meat to the IP and add enough water to cover the meat to make enough gravy. Make sure you set the valve to "SEAL." It takes only 10 minutes after the pressure builds up (You can hear the steam coming out of the valve.) The timer on the front will count down. When the time is finished on the IP a beep will tell you it is done and turn off the IP to keep warm. No more burned pots. This is why I use it every day.

**Notice the warnings on the lid. Protect your hands. I use a long spoon to move the valve to "VENT," a wet kitchen towel will protect your kitchen from the escaping steam. This IP cannot explode. READ AND FOLLOW DIRECTIONS. I have tried to turn the lid before all the pressure was released. You CANNOT get the lid off.



When I worked full time, I would buy a huge package of cubed steak and ask Mom, Bobbie Roberts, to cook some for her family and some for my family. Mom used two electric frying pans and let it simmer all day. It was the best. Some friends tell me they do theirs in the Crock Pot. If you know me, I am a spur of the moment. I want it now kind of cook. Being a home economics major, I was familiar with the top of the stove pressure cooker, but they take careful watching. In my retirement, I do not wear a watch. My hearing is so selective that I often miss the buzzer when boiling eggs. My BFF boiled her eggs dry today. Cleaning a pan with burned food is the pits. And it ruins my manicure!


That is why I love, love, love to cook in the Instant Pot. It cuts off after the programmed time. Use  QUICK RELEASE. The worst that could happen is a greenish-gray ring may appear around hard-cooked egg yolks.

  • Ingredients
  • 1/3 cup honey
  • 1/2 t. garlic, minced
  • 1/2 cup low sodium soy sauce 
  • 1/2 cup ketchup
  • 1/2 teaspoon dried oregano
  • 1/2 parsley
  • 1 tablespoon oil
  • 4 to 6 bone-in, skinless chicken thighs
  • salt and fresh ground pepper, to taste
  • For Garnish
  • 1/2 tablespoon toasted sesame seeds, 
  • sliced green onions,


Steps
  1. In a small mixing bowl combine honey, minced garlic, soy sauce, ketchup, oregano and parsley; mix until well combined and set aside.
  2. Heat the Instant Pot in sauté mode.
  3. Add oil to the pot.
  4. Season chicken thighs with salt and pepper; arrange in the instant pot and cook for about 2 to 3 minutes per side.
  5. Add the prepared honey garlic sauce to the pot; cover and lock the lid.
  6. Cook in poultry mode for 20 minutes.
  7. Turn off the pot and allow it to release the pressure, about 5 minutes.
  8. Transfer chicken to a serving plate and spoon the sauce over the chicken.
  9. Garnish with toasted sesame seeds and green onions.
  10. Serve.

IP Egg Custard

Ingredients


  • 3 eggs lightly beaten


  • ⅓ cup sugar


  • 2 cups milk
  • 1 tsp. vanilla flavoring


  • ¼ teaspoon ground nutmeg or cinnamon
Steps
  1. In a mixing bowl combine milk and sugar.
  2. Heat milk one minute in the microwave to melt the sugar. 
  3. Add vanilla, spice, and eggs mix with an immersion blender.
  4. Add 1 to 1 ½ cups of water to IP. 
  5. Use an ovenproof bowl that will sit on a trivet in the Instant Pot. Pour in the egg mixture.
  6. Close the lid on the Instant Pot and turn the valve to pressure. Cook on the manual high setting for 5 minutes. When time is up, perform a quick release.
Use a long wooden spoon to move the valve to release. 

Alternately for individual servings
  • Use double stacked pans. Put 5 silicone muffin cups in each pan and carefully pour in the mixture.
  • Sprinkle with the nutmeg. Add 1 to 1 ½ cups of water to IP.
  • Stack pans, cover with lid using handles lower in the instant pot.
  • Close the lid on the Instant Pot and turn the valve to pressure. Cook on the manual high setting for 10 minutes. When time is up, perform a quick release or pressure.

  • Rotisserie chicken, 
  • salt and fresh pepper to taste
  • olive oil
  • 1/2 tsp. minced garlic

  • 1/2 medium diced onion

  • 1/2 cup diced red bell pepper

  • 1/4 cup diced green bell pepper

  • 1/2 teaspoon dried oregano

  • 1 bay leaf



  • 1 14 oz can crushed or diced tomatoes 

  • 1 can mild Rotel
  • 1 small can of tomato sauce

Steps
  • Shred rotisserie chicken breast, set aside


  • Press saute on the Instant Pot, add oil, garlic, onions and peppers. Sauté until soft and translucent. Add shredded chicken.

  • Pour tomatoes over the chicken and vegetables, add oregano, bay leaf, salt, and pepper, give it a quick stir and cover.

  • Use manual setting for 10 minutes; natural release.

  • Remove bay leaf, garnish with parsley and serve over pasta, spaghetti squash, or rice.
  • Frozen onions and peppers make this a quick and easy dish.
  • If it is too dry, I add whatever salsa I have on hand.

IP Rotisserie Rice and Broccoli

Ingredients
  • Tbs Oil
  • Rotisserie Chicken shredded
  • ½ tsp. Minced Garlic
  • 1 Small Onion, sliced
  • Salt
  • Pepper
  • 1⅓ Cups Long Grain Rice
  • 1⅓ Cups Chicken Broth
  • ½ Cup Milk
  • 1½ Tbs Flour
  •  
  • 1-2 Cups Fresh Broccoli cooked*
  • 1½ - 2 Cups Mild Shredded Cheddar Cheese
Steps
  1. Turn Instant Pot onto saute. Add oil and heat until hot. When hot, onion, and garlic.
  2. Cook chicken mixture until onion starts to get translucent. Add shredded chicken, rice, broth, and seasonings. Stir well.
  3. Whisk together milk flour and set aside.
  4. Cook on manual high pressure for 5 minutes. When the timer beeps perform a quick release.
  5. Immediately add milk and flour mixture and mix until thickened.
  6. Add broccoli and cheese and stir until well combined. Serve immediately.

  • *I use frozen chopped broccoli thawed.

Quick Pickled Cabbage

  • 1/2 small/medium head red cabbage
  • 1 cup water
  • 1/2 cup apple cider vinegar
  • 1/2 cup red wine vinegar
  • 2 teaspoons sugar (or coconut sugar, brown sugar, pure cane sugar)
  • 2 cloves garlic, smashed
  • 2 dried bay leaves
  • 2 teaspoons caraway seeds (optional)
  • 1 teaspoon salt
  • black pepper
Make at least 4 hours before serving.
Slice cabbage in half. Slice one half in half again. Remove the core. Shred cabbage finely with a mandolin slicer or very sharp knife. Place in a large glass bowl or jar.
Place water, vinegar, and sugar in a bowl and whisk together until the sugar is mostly dissolved. Stir in the smashed cloves, bay leaves, caraway seeds (if using), salt, and a good grind of black pepper. Pour over the cabbage. Seal or tightly cover the jar/bowl and let sit on the counter for 3-4 hours. Stir then seal and place in the fridge until chilled (at least 1 hour).
Stir before serving and be sure to not grab any of the garlic cloves as you serve.


Notes:
At first, the liquid will not cover all of the cabbage but it starts to soften and will be fully covered after just a few hours. Best served at least 1 day after making. Keeps for about 2 weeks sealed in the fridge.
The caraway seeds are completely optional. They lend a "rye bread" sort of flavor that I adore. I buy them in small quantities in the bulk spice section. You can really get creative with the add-ins or keep it simple without the garlic, bay leaves, and caraway seeds.

To smash a garlic clove, remove the peel and press against the cutting board with the flat part of your knife. It should still be mostly held together.
