Coleslaw with Poppy Seeds


  • 1 (16 ounce) bag coleslaw mix
  • 2 tablespoons diced onion
  • 2/3 cup mayonnaise
  • 3 tablespoons vegetable oil
  • 1/4 cup white sugar
  • 1/4 tablespoon white vinegar
  • 1/4 teaspoon salt
  • 1/2 teaspoon poppy seeds


1.  Combine the coleslaw mix and onion in a large bowl.
2.  Whisk together the salad dressing, vegetable oil, sugar, vinegar, salt, and poppy seeds in a medium bowl; blend thoroughly. Pour dressing mixture over coleslaw mix and toss to coat. Chill at least 2 hours before serving.

Twice Baked Potato Casserole Recipe

6 medium  potatoes, baked
1/2 teaspoon salt
1/4 teaspoon pepper
1 lb bacon, cooked and drained
3 cups sour cream
2 cups shredded mozzarella cheese
2 cups shredded cheddar cheese
2 green onions, chopped
6 strips bacon cut into small pieces and pre-cooked in a frying pan with all fat drained off
1.     Cut peeled potatoes in 1 inch cubes.
2.     Place half in greased 13x9 baking dish.
3.     Sprinkle with half the salt, pepper, and bacon.
4.     Top with half the sour cream and cheeses.
5.     Repeat layers.
6.     Bake, uncovered at 350* for 25 minutes.
7.     Top with the rest of your sour cream and cheeses and the bacon bits and bake for another 15 minutes.
8.     Sprinkle with onions.

New York Cream Cheesecake

All ingredients should be at room temperature with the exception of the whipping cream.

2- 8oz. pkg. Cream Cheese
1 cup heavy whipping cream
1 ½ cups white sugar
6 eggs
1 stick butter or margarine
1 teaspoon grated lemon rind
½ cup corn startch
½ teaspoon vanilla

Preheat oven to 350 degrees. Grease a 9-inch springform pan and wrap the outside of the pan with foil.  This will keep water from seeping into it during baking.

Put all ingredients into a bowl and beat 15-20 minutes, do not under beat! Pour batter evenly into prepared pan. Set the pan in a container deep enough to fill with ½ to 1 inch of water. Cook for 1 hour and 15min without peeking. Cut oven off and leave cake in the oven for 1 hour more with the door open as it cools down-it will fall some.

Refrigerate and serve chilled with desired toppings.

Oatmeal Breakfast Smoothie

This is so filling and healthy.

3/4 cup milk
1/4 cup rolled oats
8 strawberries
1/4 t. vanilla
1/2 banana
1 t. honey

Put all ingredients in smoothie maker or blender and pulse and enjoy.
