Wacky Chocolate Cake



  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 3 tablespoons unsweetened cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1 teaspoon vinegar
  • 1/3 c. cooking oil
  • 1 cup cold water

Preparation:

In a large mixing bowl, sift all flour, sugar, cocoa, soda and salt into a 9x9 inch ungreased square pan. Make three holes in the flour mixture. In one put vanilla; in another the vinegar, and in the third the oil. Pour the cold water over the mixture and stir until moistened. Do not beat! Bake at 350°F. oven for 25 to 30 minutes, or until it springs back when touched lightly. Leave in pan to frost.

The frosting is made as follows:
1/2 c. sugar
1/2 c. milk
1/4 stick butter
1 1/2 T. flour
1/2 c. coconut
1/2 c. pecans (optional)

Cook until very thick and add 1/2 t. vanilla and 1/2 c. nuts. Spread on cake while warm and cut into squares.
