Zucchini Bread

3 eggs –Beat until light and fluffy
1 cup oil
2 1/2 cups sugar
3 teaspoons vanilla
2 cups zucchini, grated

3 cups flour
1 teaspoon salt
1 teaspoon baking soda
1/4 teaspoon baking powder
3 teaspoons cinnamon
1 cup nuts (optional)

Directions:

Preheat oven to 325 degrees.
Combine first 5 ingredients.
Stir dry ingredients until mixed thoroughly.
Pour into two greased loaf pans. (Or five mini disposable loaf which can gifts)

Bake for 40 min.
