Spicy Pumpkin Butter

 


Pumpkin butter is not butter at all, but a smooth, sweet reduction of pumpkin puree that makes a lovely spread for toast, pancakes, waffles, scones, or anything else you care to accent with the warm, cozy flavors of fall.
Ingredients:
  • 1 cup unsweetened pumpkin puree
  • 1/3 cup brown sugar
  • 1 tbsp. freshly squeezed orange juice
  • Grated zest of 1 orange
  • 1 tsp. pumpkin pie spice
Instructions:
  1. Combine pumpkin puree, sugar, orange juice and zest, and spice in a small saucepan over medium heat and bring to boil.
  2. Lower heat and let simmer for 20 mins, until puree thickens and gets dark and fragrant. Stir frequently so the pumpkin butter doesn’t burn.
  3. Let cool and store in an airtight container in the refrigerator for up to 2 weeks.
