Pumpkin butter is not butter at all,
but a smooth, sweet reduction of pumpkin puree that makes a lovely spread for
toast, pancakes, waffles, scones, or anything else you care to accent with the
warm, cozy flavors of fall.
Ingredients:
- 1 cup unsweetened pumpkin puree
- 1/3 cup brown sugar
- 1 tbsp. freshly squeezed orange juice
- Grated zest of 1 orange
- 1 tsp. pumpkin pie spice
Instructions:
- Combine pumpkin puree, sugar, orange juice and zest, and spice in a small saucepan over medium heat and bring to boil.
- Lower heat and let simmer for 20 mins, until puree thickens and gets dark and fragrant. Stir frequently so the pumpkin butter doesn’t burn.
- Let cool and store in an airtight container in the refrigerator for up to 2 weeks.
