Quiche Lorraine


 2 regular pie crust, softened 
 4 slices bacon, crisply cooked, crumbled
1 tablespoon chopped onion, if desired
1 cup shredded Swiss or Cheddar cheese (4 oz)
1/4 cup grated Parmesan cheese
4 eggs, slightly beaten
2 cup half-and-half or milk 
1/4 nutmeg 
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup grated Parmesan cheese

Bake empty pie shell 5 min. at 450 degrees. Put cooked, drained bacon, cooked onion and cheeses in the pie shell. Mix eggs, half and half, spices, and pour into the pie shell.

Bake 15 minutes at 450 and then 350 for 10 minutes.
