Chess Pie

1 1/2 cups sugar
1 stick unsalted butter (melted)
3 large eggs (lightly beaten)
1 T apple cider vinegar
1 tsp vanilla extract

Melt butter in saucepan cream in sugar, add vinegar, and beat in eggs. Add vanilla and pour into unbaked pastry shell. Bake  at 350 degrees for 10 minutes. Turn temperature down to 250 and cook about 30 minutes until crust is golden brown and center is set when touched with your finger. Transfer to a wire rack to cool slightly before serving.
