Cantaloupe Pie

1 ½ cup cantaloupe grated
1 ½ cup sugar
3 tbsp all-purpose flour
3 eggs, separated
1 tsp vanilla
1 c. evaporated milk or heavy cream
1 pie shell

Whip egg whites, save for meringue.
Combine sugar and flour, add eggs and mix well. Stir in grated cantaloupe and vanilla. Pour into pie shell and cook at 325 for 45 min.-1 hour. Arrange egg whites on top and brown. If preferred, serve with whipped topping instead of meringue. Chill and serve.
