Sweet Potato Pie

1 1/2 c. sugar
3 eggs
1 T. flour
3 potatoes
1/2 c. butter
1 1/2 c. milk seems like a lot of milk
1 t. vanilla
1 pie crust

Mix ingredients.
Bake 375 degrees for 30 mins. or until firm

Directions from a similar recipe.

  1. Bring a large pot of water to a boil. Add sweet potatoes and cook until tender but still firm, about 30 minutes. Drain, cool, peel and mash. Preheat oven to 350 degrees F
  2. In a large bowl, combine sweet potatoes, butter, sugar, vanilla and nutmeg. In a small bowl, whisk together the eggs and milk and blend into the sweet potato mixture.
  3. Pour into pie shell and bake in preheated oven for 30 minutes, or until done.


Slow Cooker Tortilla Soup

·         1 bay leaf
·         1 pound shredded, cooked chicken
·         1 (15 ounce) can whole peeled tomatoes, mashed
·         1 (10 ounce) can enchilada sauce
1 medium onion, chopped
·         1 (4 ounce) can chopped green chile peppers
·         2 cloves garlic, minced
·         2 cups water
·         1 (14.5 ounce) can chicken broth
·         1 teaspoon cumin
·         1 teaspoon chili powder
·         1 teaspoon salt
·         1/4 teaspoon black pepper
·         1 (10 ounce) package frozen corn
·         1 tablespoon chopped cilantro
·         7 corn tortillas
·         vegetable oil 
Directions
Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker. Pour in water and chicken broth, and season with cumin, chili powder, salt, pepper, and bay leaf. Stir in corn and cilantro. Cover, and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours.

To make your Tortillas Strips
  • Preheat oven to 400 degrees F
  • Lightly brush both sides of tortillas with oil. Cut tortillas into strips, then spread on a baking sheet.
  • Bake in preheated oven until crisp, about 10 to 15 minutes. To serve, sprinkle tortilla strips over soup.

Easy Cherry Cheesecake Pie


  • 1-8 oz. pkg. cream cheese 
  •   ½ c. sugar 
  • 2 cups Cool Whip 
  •  Can of cherry pie filling 
  •  Graham cracker pie crust
Cream softened cream cheese with sugar. Fold in Cool Whip. Pour in graham cracker crust. Spoon on cherry pie filling. Chill for 2 hours.

 To make individual cheesecakes, 
  • Place a vanilla wafer into each lined muffin tins.
  • Spoon cream cheese mixture  
  • Top each one with a spoonful of cherry pie filling.
